Dr. Abbigail Pace joined the Department of Dietetics and Human Nutrition in 2025 as an Assistant Professor. She is also a Registered Dietitian Nutritionist and licensed dietitian. Her teaching experience is in Medical Nutrition, Nutritional Biochemistry, and Nutrition Counseling and Education. Abbigail’s research background is the utilization of campus coalitions to address college student food insecurity, community-based participatory research, and SNAP eligibility and use among college students. She has received multiple awards for her work on bringing together campus resources to address student food insecurity. Her current research is focused on orthorexia nervosa and teaching clinical skills to dietetics students. Abbigail has experience in serving as an outpatient dietitian at Auburn University Health Promotion & Wellness Services where she treated individuals with eating disorders utilizing campus-based interdisciplinary team. Abbigail is an active member of Kentucky Academy of Nutrition and Dietetics where she has served in various leadership roles.
